Chinese Tomato Egg Stir-Fry

Perfect quick and easy meal to make for dinner.

  • 4 small to medium tomatoes
  • 3-4 scallions
  • 8 eggs
  • 1 1/2 tsp salt
  • 1 tsp sesame oil
  • 2 tsp sake
  • 3 tbsp vegetable oil
  • 4 tsp sugar
  • 1/4 - 1/2 cup water

Recipe

  1. Start cooking 1 1/2 - 2 cups short grained rice.
  2. Cut tomatoes into small wedges and finely chop the scallions.
  3. Crack 8 eggs into a bowl and season with 1/2 teaspoon salt, 1 tsp sesame oil, and 1 teaspoon sake.
  4. Preheat the wok over medium heat. Add 2 tablespoons of oil. Once the wok starts getting warm add the eggs. Scramble the eggs and remove the wok immediately. Set aside.
  5. Add 1 more tablespoon of oil to the wok. Turn the heat up to high and add the tomatoes and scallions. Stir-fry for 1 minute. Add 4 teaspoons sugar, 1 teaspoon salt, and 1/4 cup water (play this by ear. If the pan gets really hot, you should add a little more water).
  6. Add the cooked eggs and mix everything together. Cover the wok and cook for 1 - 3 minutes util the tomatoes are completely softened.
  7. Uncover and continue to stir-fry until the sauce thinkens to your liking.
  8. Serve over rice.
